An Englishman, an Irishman, and an Australian walk into a pub……

Ha, ha, we’ve all heard the jokes!  This is exactly what happened here in Fort Worth last week.  A small birthday party had been organised for a lovely and very deserving Irish friend, and I was so lucky to be invited (token Aussie) along with some lovely British ladies.

I really wanted to make her a cake that depicted her Irish heritage without being too green!

I had just received my Marvelous Molds Moroccan Lattice Onlay and was desperate to use it, the bottom tier was the place!  I used white on white for this tier, and I was pleasantly surprised at how simply beautiful it ended up.  I airbrushed this layer with Americolor Pearl before adding the onlay to provide a tiny bit of contrast.

The onlay itself was easier to use than I had expected.  I didn’t practice with it first, and learnt from my mistakes!  The first panel of fondant had been rolled a little too thickly, so the silicon edges had a little difficulty cutting through cleanly.  It still went on the cake without any hassle and I used my colour shapers to neaten some of the edges.  The second panel was the perfect thickness, but…..I forgot to dust the onlay with corn starch, so it stuck to the onlay…..I blame the hot Texan weather!  So I redid the second panel which worked beautifully, as did the third.

The top tier was simply airbrushed with Americolor Teal and then with Americolor Pearl.

I added some simple wafer paper flowers to the cake and shamrocks to the board and it was done.

Instead of covering the board before adding the cake as I usually do, I covered the bottom tier and board in one go.  I’m not sure if I will do this again as the board was not as smooth as I had hoped, perhaps some practice will help 🙂

So, flavours….the bottom tier was a rich chocolate cake with Baileys Irish Cream buttercream filling, and the top was vanilla cake with vanilla buttercream filling.
