Fabulous Fifty!

This cake has been in the planning for a while now, and there have been many versions of it! In the end, I decided to keep it clean and simple.

A 50th birthday cake for my sister! This one is a pink sparkling wine cake making up 4 layers, and chocolate mud for 2 layers because everyone loves chocolate! Layered with the most delicious strawberry swiss meringue buttercream, once again made with Fresh As freeze dried strawberry powder.

The cake has skylines displaying all of the wonderful places my sister has lived – Milan, San Francisco, New York, and Canberra. These were made by printing edible images and backing them with gum paste to allow them to stand on their own. There is a video of the cake spinning on my Instagram.

Initially, I left the cake very plain with nothing but the Sandra Dillon topper to decorate the top. After a good stand back and look, I decided to add some bright pink (not natural looking at all!) gum paste peonies.
