Piecaken!

A belated Happy Thanksgiving to all of my readers! Apologies for being late, I was travelling on Thanksgiving Day so we had our family celebration today.

We’ve all heard of the Turducken (a chicken stuffed inside a duck inside a turkey) but there is a new “stuffed” food on the menu, and it is proving to be very popular.

The Piecaken is a pie inside a cake; all sorts of good!!!

I thought I would give it a go for our Thanksgiving dessert this year, it did not disappoint.  Just Google Piecaken and have a look at all of the combinations, yum!

I used a store bought apple pie (that cuts the preparation time down significantly) but by all means use your favourite homemade pie recipe if you have the time.  Just make sure that your pie fits inside your cake pan.

Teamed with the apple pie was a coffee cake I found on Sally’s Baking Addiction. I chose this one as it is titled “Super Crumb Coffee Cake” and as the crumb on the top of a coffee cake is the best bit, “Super Crumb” had to be the go!  I also love this recipe as you make the crumb mixture together with the start of the cake mixture in one bowl.

I followed the recipe exactly except for putting it in the pan. I popped about 2/3 of the mixture into the cake pan and then pressed the pre baked pie into it.

Then topped with the rest of the cake mixture and the crumb topping.  Testing the cake for doneness was a little trickier as it had a pie in the middle of it.  I left it in for 55 minutes and as the cake was beginning to come away from the sides and it was golden brown I took it out of the oven – perfect.

This would also make a great dessert for Christmas day.  My family loved the combination, I would love to hear yours.  Chocolate cake with cherry pie perhaps? Let me know.
