Giant Cupcake Cake

I recently stumbled across a fabulous way to make a giant cupcake cake liner with candy melts, so off to the kitchen I went!

I found this great tutorial on YouTube and the instructions were spot on.  I was really worried it wasn’t going to come out as the tin was not greased in any way; but it slid out beautifully.

My cake base was chocolate with Cannoli Cream filling, delicious.  I sliced the cake into four layers and sandwiched with the Cannoli Cream.  The top of the cupcake was a simple vanilla cake with Cinnamon Scroll flavoured icing.

Cannoli Cream Filling recipe

2 cups ricotta cheese

1/3 cup icing sugar (confectioners sugar)

1 teaspoon vanilla paste

3/4 cup mini dark chocolate chips

*Simply combine all ingredients and enjoy!
