Fried Gnocchi
Ever crave roast potatoes but don’t have the time or patience to wait for them to cook? I have the answer!!!
While watch Nigella Lawson late one night she produced the most divine looking gnocchi to substitute for potatoes to go with her roast dinner. She calls them Rapid Roastini (Quick ‘roast’ potatoes).
It is as simple as opening the packet of gnocchi and frying in a pan with a couple of tablespoons of oil. Super quick and easy and so delicious.
Sprinkle with a pinch of salt and they are ready to serve. Crunchy and brown on the outside, soft and moist on the inside. Nigella also mentioned that you could pop them in the oven, I tried this but the result was not as good.
Needless to say, they have become one of my favourite accompaniments 🙂
