In need of replenishment!

After a crazy day on Saturday competing in Australia’s first “Warrior Dash” I thought my family deserved a yummy Valentine’s dinner.

On the menu was a Cheese Souffle, Chicken & Chickpea Tabouli, and Chocolate Espresso Tart.

I hadn’t made any of the recipes before and was pleased that they were all quick and easy.  I cheated with the tart, using store-bought dark chocolate pastry instead of making it from scratch.  I had a pomegranate in the fruit bowl and think that the glistening red jewels top the tart beautifully.

One note about the Cheese Souffle receipe, it says it serves 4……more like 8!!! So rich, best to serve with a light salad.
