Raw Food fun!
My interest in Raw Food was sparked again recently after watching the doco Simply Raw: Reversing Diabetes in 30 Days. The results found in this doco, which tracked 6 American diabetics, revealed that it may be possible to reverse both Diabetes Type 1 and Type 2 through diet alone.
Anyway, after watching I went searching on the net for Raw Food recipes. There are multitudes of them out there!!! Many are very simple and others require special equipment such as dehydrators. It is apparent that my love of all things chocolate can too be produced using just raw food. I found this recipe for Chocolate Avocado Pie and thought I would give it a whirl. The mousse is made predominately of dates and avocado. My kids love Jessica Seinfeld’s version of Chocolate Pudding which is made from avocados, so I thought this would be a good place to start.
The recipe is quick and easy and I had all of the ingredients in the cupboard. I made the crust and popped it in the fridge to set while I made the filling. Wow!!! The filling is unbelievably rich and creamy. I set aside some of the filling before putting the rest into the crust and back in the fridge to set. With the filling I had set aside I popped it into a container and into the fridge. Why? I thought I would see if the filling would harden up like chocolate ganache, with the intention of making it into truffles. The pie filling firmed up nicely and was easily shaped into truffles.
The kids both enjoyed a small slither for dessert and even that was too rich for them. We had their leftovers and that was plenty for the grown ups! While the filling was extremely rich, the pie crust was divine 🙂 I will definitely use the pie crust recipe again, perhaps for a lemon tart. Not so sure about the filling…..
