Flourless Chocolate Cake

My lovely sister-in-law is intolerant to dairy, gluten, soy, and some other miscellaneous ingredients so you can imagine how hard it is for her to find a good cake!  The week after her 30th birthday she came to visit so I made her a birthday cake to celebrate this significant milestone.

While searching the net I came across a recipe for a Flourless Chocolate Cake on the Gluten-Free Goddess blog. Instead of using butter (which Trisha can’t have), I substituted Nuttelex and it worked out fine.

This cake is extremely rich, and that’s coming from a chocolate lover! With just under 500gms of chocolate and 8 eggs it is so rich that you only need a very small slice.

I popped a decoration on top, Trisha in her scuba gear 🙂
