Fiona Poole Yummy Rice Crispy Treats
In addition to my Chocolate Chip Cupcakes, I also made some Rice Crispy Treats for the up and coming soccer stars party! So quick and easy to make and decorated in our team colours.
When I was cruising around on-line I came across this fab business
My rice crispy treats weren’t quite as glamorous as theirs but in the limited time I had they did the trick! I am hoping to get an opportunity to make some of the filled ones – yummo!
I found the recipe in this year’s Donna Hay for Kids magazine and halved it.
Recipe
8 cups large white marshmallows
150g butter, chopped
12 cups rice bubbles
Place the marshmallows and butter in a saucepan over low heat. Stir until melted and smooth.
Place rice bubbles in a bowl and add marshmallow mixture. Mix until well combined.
Using damp hands, press into a 20cm round cake pan that has been greased and lined.
Refrigerate for 1 hour or until firm. Decorate.
***As I said above, I halved this recipe. I pressed it into a 20 cm square cake pan to enable me to make bars***
